I’ve been eyeing Fossa Chocolate lychee rose dark milk chocolate for a while and finally had the opportunity to buy it! Fossa Chocolate is a Singapore-based bean-to-bar chocolate maker that creates unique flavors, many of which are inspired by Asian ingredients. I’ve been really blown away by the quality and creativity of their products.
Packaging
The packaging of the Fossa Chocolate lychee rose dark milk chocolate bar is both beautiful and practical, featuring sturdy paper adorned with watercolor roses in muted purples and pinks. The back of the package lists all of the important information, including the ingredients, nutrition facts, and best-by date.
Appearance
The chocolate bar itself is a work of art, with glossy, well-tempered chocolate in a custom mold unique to Fossa on the front side and dried lychee, dried rose petals, and cacao nibs artfully arranged on the backside. The distribution of lychee is not uniform throughout the bar, with less appearing on the edges than in the center.
Aroma and Flavor
The aroma of the chocolate is heavily lychee-scented with notes of damask roses, giving it the luxurious scent of a high-end perfume on par with Dipytique’s Eau Rose Eau De Parfum. The flavor is equally decadent, with a delicate rose-infused milk chocolate that contains rose absolute and is paired with dried lychee and cacao nibs. Rose absolute is a concentrated plant oil extracted from the petals of the Rosa damascena or Rosa centifolia flowers. It roughly takes around 60,000 roses to make 1 ounce (28 grams) of pure rose absolute. The chocolate is 54% dark milk chocolate, which is a single-origin chocolate sourced from Tanzania. The dehydrated lychee is sourced from Chiang Rai, Thailand.
Texture and Mouthfeel
The mouthfeel of the Fossa Chocolate Lychee Rose chocolate is more complex than a typical chocolate bar. It was a mixture of the smoothness of the chocolate, the chewiness of the dehydrated lychee, and the crunch of the cacao nibs. The quality of the chocolate is one of the best I’ve ever had and is worth the higher price tag.
Is Fossa Chocolate Ethical?
Fossa Chocolate values transparency, accountability, and sustainability in its production process. They source their cacao from producers who engage in agroforestry, where cacao trees are cultivated alongside other native trees and food crops. This helps to preserve the natural environment and ensures more sustainable products for the farmers in the long run, which is crucial for local communities. They also list the farmers and fermenters they work with on their website, which is a level of transparency that is rarely seen in the chocolate industry.
In addition to their commitment to sustainability in cacao sourcing, Fossa Chocolate also uses environmentally friendly packaging, made with paper containing 50% recycled materials and produced on demand to prevent unnecessary waste. They even collaborate with a local urban farming group, Edible Garden City, to upcycle cacao husks into compost for their agriculture.
Conclusion
Overall, I highly recommend the Fossa Chocolate Lychee Rose bar. This was one of the best inclusion bars I’ve had this year. It was creative, unique, and expertly executed. It was genuinely very difficult to not eat the entire bar in one go. I can’t wait to try more of their flavors, such as duck shit danchong tea chocolate, satay chocolate, and salted egg cereal chocolate. I hope other chocolate makers will follow their lead and start becoming more daring with the inclusions in their products as well.

Absolutely loved this one. It’s a high class chocolate that I would absolutely split with my grandmother over tea. The small crunch of the nibs was the perfect addition to counteract what might be seen as a too ‘delicate’ a chocolate. It’s an elegant chocolate that asserts itself. Fossa has become my favorite obsession
